KUIH TALAM UBI




My take on making Kuih Talam Ubi or Steamed Layer Tapioca Cake a traditional malay dessert.  Sweet and savoury Kuih Talam Ubi using the same basic ingredients and taste checks as it goes. Simply amazing to create these in my kitchen, not as perfect as from the stalls but taste incredibly  delicious.













Talam Ubi  / Sweet Steamed Layer Tapioca Cake


Recipe

Ingredients:
Tapioca (grate)
1 tbsp tapioca starch
1/2 cup brown sugar (adjust)
2 tbsp sugar
salt to taste

Making Sugar syrup
2 - 3 cups water
2 - 4 pandan leaves
4 gula melaka
2 cups dark brown sugar
Sugar and salt to taste

Top Layer : Make about  600 ml - 800 ml liquid
400 ml - 500 ml water (adjust)
200 ml - 300 ml Coconut milk
2 tbsp rice flour
3/4  tbsp tapioca starch
3 - 4 tbsp plain flour
Salt to taste






KUIH LEPAT UBI AND IKAN GORENG BALADO







Reminiscing the old days, share a recipe Kuih Lepat Ubi or Sweet Steamed Tapioca. This sweet dessert brings back memories from my mum's kitchen. In the past, traditional cakes or kuih made from tapioca were grated manually, nowadays with food processor grinding gets easier. Love it always!
















Kuih Lepat Ubi / Sweet Steamed Tapioca


Recipe

Ingredients:
Tapioca
1 tbsp tapioca starch
Banana leaves
Grated Coconut

Ingredients - 'adjust to taste'
1/2 cup dark brown sugar
2 tbsp sugar
Salt to taste

Making Sugar syrup
2 - 3 cups water (adjust)
3 pandan leaves
4 gula melaka
2 cups dark brown sugar
Sugar and salt to taste


Ikan goreng Balado or Balado Fried Fish for quick and easy meal.

Recipe

Ingredients:
Fish 
2 red chillies
3 green chillies
4 - 6 chillie padi
1 onion or 5 shallots
2 garlic
Lime 
1/2 tsp shrimp paste granules (belacan)
Sugar to taste

Optional: Tomato

Marinate fish:
1 tsp tumeric
1/2 tsp chillie powder
1/2 tsp white pepper
1 tsp rice flour
1/4 tsp salt

UBI GORENG AND EASY FRIED FISH CURRY





In the old days we get to eat Ubi goreng almost all the time, a delicious tapioca fritters and still loving it. Cravings for these delish bites hard to get, obviously do it in your own kitchen. Simply make it with extra aromatic spices taste truly amazing. Share an easy recipe and good to eat!

Ingredients: Tapioca 1 tbsp rice flour 1 tsp tumeric powder 1 tsp chillie powder 1/2 tsp black pepper 1/2 tsp all purpose spice mix Salt to taste All purpose spice mix : Ingredients: 4 tbsp coriander seeds 2 tbsp fennel seeds 2 tbsp cumin seeds 1 tbsp black pepper 3/4 tbsp mustard seeds

Ingredients: Fish slices Okra optional: Brinjal, tomato, coriander leaves & celery leaves Fish Marinate: 1 tsp chillie pepper 1 tsp tumeric 1/2 tsp curry powder 1/4 tsp white pepper (optional) 1/4 tsp salt 1/2 - 1 tsp mustard seeds 1 onion chopped / slice Curry leaves 1 tbsp blended onion / shallot 1 tbsp ginger & garlic paste *(Alternatively, blend all ingredients with oil) 1 onion or 8 shallots 3 garlic 3 cm ginger 2 tbsp Salted Fish Curry Mix (Baba’s Brand) 1/4 cup coconut milk 1/2 tsp tamarine paste Salt & sugar to taste

SIPUT MASAK LEMAK CILI PADI







Siput Masak Lemak Cili Padi an authentic Malay dish serve at Nasi Padang stalls . Back in the old days, our dear mum had always cook this delicious dish and we simply love it!





















Siput Masak Lemak Cili Padi

Recipe
Ingredients:
Siput / Balitong / Mud Creeper / Blunt Creeper / Sea snails 2 lemongrass 2 tumeric leaves 5 lime leaves 2 dried tamarind slices 2 packs coconut milk (400ml) Sugar and salt to taste Blended Ingredients: 2 red chillies 2 green chillies 5 - 6 chillie padi 8 - 12 shallots 5 garlic 3 cm ginger 3/4 tbsp tumeric powder or 4 cm fresh tumeric 4 candlenuts 4 - 5 tbsp vegetable oil











CUTTLEFISH SAMBAL AND BLACK PEPPER FRIED KWAY TEOW






Cuttlefish Sambal, tasty and delicious with nasi lemak or plain rice. 






Cuttlefish Sambal

Recipe

Ingredients:
Cuttlefish 3 slices galangal 1 tsp tumeric 1 tsp shrimp paste powder (belacan) 1/2 tsp tamarind paste 1 tbsp tiny dried anchovies or anchovies Blended ingredients: 2 onions or 15 shallots 5 garlic 3cm ginger Chillie paste: 40 - 50 dried chillies - Cut into thin strips, boil for 8 mins and blend







Black Pepper Fried Kway Teow, cooked with the sambal sauce and extra black pepper.






Black Pepper Kway Teow Noodle

Recipe

Ingredients:
Kway Teow Noodle
Prawns
Squids
Beansprouts
Chye Sim
Chives

Method 1

Chillie oil ( Sambal tumis sauce)
1 tbsp Black Pepper Sauce (Singlong Brand)
1 tbsp oyster sauce
1 - 2 tbsp fish sauce (adjust to taste)
2 tbsp sweet soya sauce
1 - 2 tbsp chillie sauce
optional: add 3 - 4 tbsp water

Optional :

 All purpose noodle soy sauce mix - (adjust to taste)


Ingredients: (Chopped or diced)

1 onion
2 garlic
2 cm ginger
1 Red  chillies
1 green chillies
optional : 2 - 4 chillie padi

1/4  cup sweet soya sauce
1 - 2 tbsp vinegar
1 tbsp sugar
1/2 cup water

Method 2

Yellow noodle or Kway Teow noodle
Chye Sim
Beansprout
Chives
Lime


3 tbsp sambal tumis sauce
1 tbsp oyster sauce
1 tsp sugar
2 tbsp light soya sauce
2 tbsp Kewpie Sesame soy sauce (adjust to taste)
3 tbsp chillie sauce
1/2 tsp white pepper
1/2 tsp black pepper
2 eggs
