BRIYANI RICE











Briyani Rice


Ingredients:

500g - 1 kg basmati rice

2 tbsp vinegar (optional)

1 cinnamon stick

2 star anise

4 cardamom seed

4 cloves

2 bay leaves

2 pandan leaves

1 onion - slice

1 tbsp ghee

1 tsp briyani mix (National brand)

1/2 - 1 can evaporate milk

1 1/2 tbsp ginger & garlic paste

Salt to taste

Saffron 

Briyani colour powder

Raisins

Coriander leaves

Fried shallots
























 The prawn dish recipe I've listed in the video, delicious with the briyani.






Acar Timun / Cucumber Pickle Ingredients A: *Cucumber *Carrot Pineapple - optional Raisins - optional Red & green chillies 1 tbsp mustard seeds 1 tsp tumeric powder 1/2 tbsp fish curry powder 2 - 3 tbsp vinegar Salt & sugar to taste 1 cinnamon stick (optional) 2 star anise (optional) 2 cardamom 3 cloves Ingredients: blend 8 shallots 5 garlic 4 cm ginger 3 candlenuts 12 dried chillies or 2 tbsp chillies paste 1/2 tsp belacan powder * I've tested the recipe and It is not necessary to soak cucumber & carrot with salt or kapur it will still remain crunchy ---------------------------------- Acar Timun Bahan A: Timun* Lobak merah* Nenas Kismis Cili merah & hijau 1 sudu besar biji sawi 1 sudu kecil serbuk kunyit 1/2 sudu besar serbuk kari ikan 2 - 3 sudu besar cuka Garam & gula secukup rasa 1 kayu manis 2 bunga lawang 2 buah pelaga 3 bunga cengkih Bahan B: dikisar 8 biji bawang kecil 5 biji bawang putih 4 cm halia 3 biji buah keras 12 chilli kering /2 sdm cili kisar 1/2 sdk belacan serbuk
*Tidak perlu rendam timun dan lobak merah dengan air garam & kapur - Timun & lobak merah tetap ranggup

  
















Sweet & Sour Prawns


Ingredients:

Prawns

1/2 tsp turmeric 

Salt

Green / red capsicum

1/2 cup chillie paste

1 lemongrass

1/2 tsp coriander powder

1/4 tsp fennel powder

1/2 tsp cumin powder

4 tbsp Tae-Pee Thai chilie sauce

2 tbsp plum sauce

Salt to taste



Ingredients: blend

2 red chillies

1 onion

4 garlic

3cm ginger

3 candlenut

Mee Hongkong Paste Ingredients: Blend & sautéed 2 onions or 20 shallots 8 garlic 4cm ginger 4 candlenuts 1 - 2 tbsp white peppercorns 1 cup oil Mee Hoon Putin / Bee Hoon Goreng Singapura Ingredients: Rice Vermicelli Beef / Mutton Prawns Squid Chye Sim Vegetables (Sawi) 1 -2 tbsp mee Hongkong onion paste 1 tbsp black pepper 2 tbsp white pepper 1 tbsp oyster sauce 1 tsp sugar 3 - 4 tbsp fish sauce 1/4 tsp salt (optional) Fish cakes or quail eggs Pickled Chillies Ingredients: 6 Red & green chillies 2 - 3 tbsp sugar 2 tbsp white vinegar 1/4 tsp salt 1/4 cup hot water
