INDIAN ROJAK














Indian Rojak Sauce Ingredients: 6 Sweet Potatoes 30 dried chillies 2 onions 10 garlic 1/2 cup tiny shrimp 1 cup red sugar 3 tbp sugar 3/4 tbsp tamarind Salt to taste Peanuts













Indian Rojak Fritters 
Step 1 Ingredients: Two types of dough mixtures
Flour & Coconut Fritters Dough Mixtures Dry ingredients: 3 cups Flour 1 tbsp rice flour 1 tbsp cornflour 1/4 tsp bicarbonate soda 1/4 tsp salt Yeast mix: 2 cups warm water 2 - 3 tbsp sugar (I've used 2 tbsp sugar) 1/2 pack dry instant yeast (Divide from 11g pack)





































Indian Rojak Fritters Ingredients: 3 types of dough mixture proofed for over 3 hours or till double in volume 1 . Tumeric dough mixture 2. Coconut dough mixture 3. Basic dough mixture Note: Grated coconut can be added to the dough mixture before or after proofing. Making Coconut Fritters - Coconut dough mixture 3 tbsp flour Optional : Sugar & salt to taste Set aside for 5 mins Note: Add warm water if require Flour Fritters 1/2 portion Tumeric dough mixture 3 tbsp flour 2 tbsp warm water - optional Mix well and set aside Making Onions & Chillies Fritters 1/4 portion Tumeric dough mixture 1/4 cup flour Onions, red & green chillies, chives or celery, spring onions 1/4 tsp tumeric, 1/4 tsp chillie powder 1/4 tsp white pepper Salt to taste Optional: Tiny dried shrimps, prawns & warm water Prawn Fritters - Ingredients: marinate Prawns 1/4 tsp salt 1/4 tsp white pepper 1/4 tbsp cornflour Making Prawn Fritters 1/4 portion Tumeric dough mixture 1/4 cup flour Onions Red & green chillies, Chives or celery, spring onions, 1egg 1/4 tsp chillie powder 1/4 tsp white pepper Salt to taste Warm water Other ingredients: Potatoes Hard boiled eggs Beancurd Tempe Crabmeat Hotdogs Boiled beef lungs
Onions (cut & soak in water with 1/4 tsp salt) Green chillies Cucumber Lettuce 1st Batter mixture : 2 tbsp cornflour 3 tbsp rice flour 1/4 tsp tumeric 1/4 tsp white pepper 2 eggs Salt to taste 1/4 cup ice water 2nd Batter mixture : 1/2 tsp tumeric 1/2 tsp chillie powder 1/2 tsp white pepper 5 garlic (pound ) Salt to taste 
Beef lung - 2 tbsp sugar or honey
Fry potatoes & eggs with tumeric, chillie powder & salt (Optional:- Food colouring) Extra flavour add 6 crushed garlic to the hot oil












The Indian rojak sauce created based on my tastebuds, many variations and I'm happy with it!

MEE REBUS, SHRIMP FRITTERS & FRIED BANANAS











Mee Rebus Ingredients: Beef / Mutton Yellow Noodle Beansprouts Green Chillies Fried shallots Fried beancurd Lime Celery Boiled eggs Sweet soya sauce Sweet potatoes 2 lemongrass 3 tbsp curry powder 1 cup red sugar or dark brown sugar Sugar to taste Salt to taste 1 - 2 tsp tamarind paste (to taste) 1/2 cup peanuts 1 - 2 tbsp plain flour (mix with water to thicken the gravy) Ingredients: blend 1 cup tiny dried shrimps 1/2 cup ikan bilis 1/2 cup taucho (salted soya beans) 3 onions 12 garlic 30 dried chillies 6cm ginger 5cm lengkuas 1/2 tsp belacan







Shrimp Fritters Ingredients : 1/4 cup rice flour 2 tbsp corn flour 1 egg 1/4 tsp white pepper Salt 1/4 tsp tumeric powder 1/2 cup tiny dried shrimps 1/4 tsp sugar 1/4 tsp chicken granules 1 cup ice cold water Optional: 1/2 tsp coriander powder 1 tsp coriander seeds coarsely pounded 2 garlic 2 candlenuts
































Fried Bananas / Goreng Pisang Ingredients: 1 cup rice flour 2 tbsp corn flour 1 egg 1/4 tsp tumeric Salt to taste Water Fried Banana / Goreng Pisang Ingredients: Pisang Kepok / Saba Banana 8 tbsp rice flour 1 tbsp plain flour 3/4 tbsp sugar 1/4 tsp salt 1/4 tsp turmeric 2 tbsp air kapur 1/2 tbsp Planta margarine Water Air kapur : 1/4 tsp kapur 1/2 cup water Pisang Kepok / Saba Banana Bahan-bahan: 8 sudu makan tepung beras 1 sudu makan tepung gandum 3/4 sudu gula pasir 1/4 sudu teh garam 1/4 sudu teh kunyit 2 sudu makan kapur 1/2 sudu makan Planta margerin Air Air Kapur : 1/4 sudu teh kapur 1/2 cawan air
