MEE KUAH MAMAK












Mee Kuah Mamak

Recipe

Ingredients:
Mutton meat & bones / ribs
Yellow noodles
Potatoes
Cabbage
Chye Sim / Sawi
Celery
Spring Onion
Fried shallot
Eggs
1 sup bunjut
1/4 tsp nutmeg


Step 1
Blanch mutton meat & bones / ribs for 8 mins and rinse
Boil mutton with ginger, sup bunjut and salt for 40 mins


Saute Ingredients: Pound
1 onion or 12 shallots
3 garlic
3 cm ginger

Mix spices
1 cinnamon stick
2 star anise
4 cardamom
4 cloves

Ingredients:
4 tbsp chillie powder (adjust)
5 tbsp Mak Siti Rempah Soup Spices (any brand)
1/2 tsp tumeric
1 can tomato soup or 1 can tomato puree
Tomato sauce 
Chillie Sauce 
3 tbsp red sugar
2 beef cubes
Sugar & salt to taste

Step 2
Saute pounded ingredients, add chillie powder, rempah soup spices, tumeric and some water

Additional ingredients: {Extra spicy}

 Add 4 tbsp chillies paste, blended onion, ginger & garlic paste

Pour tomato soup or tomato puree, chillie sauce, red sugar 

Pour sautéed rempah into the mutton stock and simmer for 10 mins

Add chillie & tomato sauce, sugar, salt {adjust to taste } & nutmeg
