NASI TOMATO / AYAM MASAK MERAH

 

Hari Raya cookies, these are my old time favourites.  Kuih Makmur freshly baked and homemade pineapple tarts!

MUTTON BRIYANI RICE

Mutton Briyani Rice Ingredients: 1/2 kg basmati rice 2 bay leaves Salt to taste Saffron 1/2 can evaporated milk Yellow colouring Coriander leaves Fried Onions Raisins Fried cashew nuts 

Mutton Briyani

Ingredients: Fried onions or shallot 10 onions or 30 shallots (slice) 1/4 pot oil 1 tbsp ghee Ingredients: 1/2 kg Mutton meat / Mutton ribs 1 cinnamon 2 star anise 4 cardamom 4 cloves 2 bay leaves 2 tbsp Briyani Masala Mix (National Brand) 1 tbsp garam masala 1 tbsp chillie powder 1 tsp tumeric 1/2 can tomato puree 2 tbsp kurma powder Coriander leaves Mint leaves 4 green chilles 1 cup yogurt 2 lime or 1 lemon juice 1 tsp sugar Salt to taste Paste: blend 3 onions 5 garlic 6cm ginger 1/4 cup cashew nuts / almond

Mutton briyani often serve with several side dishes like dalca, pickled cucumber acar or pineapple and many more. Mutton Briyani served with Paceri Nenas and a dalca dish another amazing idea for home meals or gatherings.

PACERI NENAS

Paceri Nenas 

Ingredients: Pineapple Green chillies 50 ml coconut cream 1/2 tsp tamarind paste 1 tbsp brown sugar Salt to taste 4 tbsp vegetable oil 1/2 tsp ghee - optional 1 cinnamon stick 2 star anise 3 cardamom 3 cloves 1/4 tsp cumin seeds 1/4 tsp fenugreek seeds 3 tbsp curry powder 1 tbsp chillie powder 1/2 tsp garam masala 1/4 tsp fennel powder 1/4 tsp cumin powder 2 curry leaves 1 lemongrass 1 onion & 3 garlic - slice

1 tbsp kerisik - optional Ingredients: blend 2 onions / 8 shallots 3 garlic 3cm ginger 1/4 cup dried shrimp ( I skip)
