YOUTIAO {CHINESE CRULLER} AND ROJAK - CHINESE STYLE




Youtiao (Chinese cruller), also known as fried breadsticks or Char Kway. I don’t have the original recipe, but this version is good enough and tastes almost as good as the real thing. I did learn some basic skills while making the dough from scratch. I use self-raising flour, double-acting baking powder, egg, oil, you can see the full process in this video. 




























These fritters are cut into small pieces and fried in a regular pan with only a little oil. The result turned out surprisingly well — with more learning and practice, it can get even better. No twisting or fancy shaping is needed; just pull and stretch the dough, 







A few useful tips to share for the best results, use self-raising flour (I used the Redman brand), as not all brands perform the same. If you can’t find it, choose the highest-quality self-raising flour available. Avoid adding too much extra flour while kneading, or the breadsticks will turn hard after frying.









Chinese rojak is a mix of vegetables and fritters served with a delicious spicy, nutty gravy. Rojak Petis, the Malay-style version, is made with a combination of fruits and vegetables tossed in a spicy peanut sauce
