SAMBAL GORENG AND KERUTUK AYAM


























Sambal Goreng

Ingredients: Beancurd Tempe Beef / mutton Beef lung (Paru) Prawns Chicken Liver 6 crushed garlic 1/4 tsp salt 4 onions 15 red & green chillies 10 dried chillies Long beans 2 lemongrass 4 cm lengkuas 5 lime leaves 2 tumeric leaves 200 ml coconut milk 1 tsp belacan 1 tsp tamarind 2 tbsp dark brown sugar or palm sugar Sugar and salt to taste Fried shallots Ingredients : blend 12 dried chillies 3 onions or 20 shallots 6 garlic 6 cm ginger 2 tbsp dried shrimp 4 candlenuts 2 lemongrass 1 tsp tumeric Sambal Goreng Ingredients: Beancurd Tempe Beef / mutton / beef lung Prawns Long beans 1 lemongrass 4cm lengkuas 2 tumeric leaves 4 onions 15 red & green chillies 10 - 15 red & green chillies padi Sugar & salt to taste Combine all ingredients in a bowl 200 ml coconut milk 2 tbsp belacan 1 tbsp tamarind paste 2 cups water Ingredients : blend 2 onions / 20 shallots 5 garlic 6 cm ginger 2 lemongrass 5 cm lengkuas
Kerutuk Chicken 

Chicken 100 ml Coconut milk Potatoes 1 cinnamon 2 star anise 3 cardamom 4 cloves 2 lemongrass 4 cm galangal (slice or bruise) 3 tbsp kerutuk curry mix or curry powder 1 tbsp chillie powder 1 tsp tumeric powder 1/4 tsp nutmeg 1 tsp black peppercorns - grind Chicken granules 1 tbsp coriander powder 1 tsp fennel powder 1 tsp cumin powder 1/2 tbsp dark brown sugar Salt to taste Ingredients : blend 2 onions or 20 shallots 4 garlic 4 cm ginger
