Beef Dalca
Ingredients:
Beef shank & Ribs / Mutton
2 cups dhal (Yellow Lentils)
5 cm ginger
Potatoes
Brinjals
Long Beans
Tomatoes
Green Chillies
Coriander Leaves
Spring onion
1/4 cup cooking oil
1 tbsp ghee
4 dried chillies
2 lemongrass
Curry leaves
2 pandan leaves
Mix spices:
1 cinnamon stick
2 star anise
4 cardamom
4 cloves
1 tbsp mix fenugreek or halba campur
Blended ingredients:
2 onions or 25 shallots
4 garlic
5cm ginger
Curry mix:
3 tbsp curry powder (Baba's Sambar Mix - Serbuk Kuah Dal Baba's)
1 tbsp garam masala
1 tsp tumeric
1 tbsp chillie powder
1 tsp coriander powder
1 tsp fennel powder
1 tsp cumin powder
Mix spices: dry fry (optional)
Coriander seeds
Fennel seeds
Cumin seeds
Blackpeppercorns
Mustard Seeds
Salt & sugar to taste
3 tbsp tamarind paste or 4 tamarind slice
200 ml coconut cream or 3/4 can evaporated milk
Sauteed ingredients:
2 tbsp oil
1 tsp ghee
1 onion or shallots (slice)
2 garlic
1 tsp cumin seeds
Curry leaves
