ROTI BOYAN



Roti Boyan or Boyanese bread is originated from the Boyanese community. The traditional snack has  passed down for generations, it has been one of the favourite foods among the malay community and other races. Looking back and craving for it, I decided to recreate the fried bread at home.













Roti Boyan / Potato Roti


Recipe

Ingredients:

Filling
  • Potatoes (boiled & mashed)
  • Onion (chopped)
  • Spring onion (chopped)
  • 1/2 tsp white pepper
  • Salt to taste
  • 4 eggs (beaten)


 Pastry Dough
  • 1 kg flour
  • 3 tbsp  Planta margarine 
  • 3 cups cold water
  • 1/2 tbsp salt
  • 1/4 cup vegetable oil


Sambal Tumis Ikan Bilis (Anchovies)

Ingredients:

  • 50 dried red chillies
  • (deseed, boil & blend)


Blended Ingredients: (Use about 4 tbsp onion mix)
  • 2 onions / 20 shallots
  • 6 garlic
  • 3 cm ginger


Other ingredients:
  • 1/2 tsp shrimp paste granules (belacan)
  • 1 tsp tumeric
  • 1 ikan bilis cube or 1 tsp chicken granules (optional)
  • 2 tbsp palm sugar / 2 tbsp red sugar 
  • Sugar to taste
  • Salt to taste
  • 1/2 tsp tamarind paste



NASI MINYAK / GHEE RICE















Nasi Minyak / Ghee Rice

 Recipe

Ingredients: 
  • 1 kg Basmati rice
  • 2 tbsp Ghee 
  • 5 tbsp vegetable oil (1/4 cup)
  • 1 can Evaporated milk
  • 2 Pandan leaves
  • 1 tbsp  ground almond 
  • 1 Chicken cube 
  • Coriander leaves
  • Egg Yellow colouring or Saffron milk (optional)
  • Fried shallots
  • Cashew nuts / Almond

Ingredients: 
  • 1 Cinnamon
  • 2 Star Anise
  • 4 cardarmom
  • 4 cloves
  • 2 Pandan leaves


Ingredients: {Slice}
  • 1 onion or 6 shallots 
  • 2 garlic (slice)


Blend / pound
  • 2 garlic
  • 3 cm ginger

Acar Buah / Dried Fruit Pickle

Dried Fruit Pickle / Acar Buah Ingredients: Mixed dried fruits (raisins, prune, apricot, nutmeg etc.) Shallots Garlic 4 tbsp chillie paste 2 tbsp chillie powder 2 tbsp curry powder 1 tsp tumeric 1 tbsp garam masala 3 tbsp sugar 3 tbsp vinegar Salt to taste 1/4 cup sugar syrup 3 cinnamon 4 star anise 4 cardarmom 6 cloves Spice mix: (toasted - use 1 tsp spice mix) Coriander seeds Fennel seeds Cumin seeds Black pepper Blended ingredients: 10 shallots 6 garlic 5cm ginger

Ingredients:
Durians
Glutinous rice (steaming / rice cooker)
Bread / Baguette

Pengat Durian / Serawa Durian
Method 1
Ingredients:
Durian
400 ml Coconut cream
2 palm sugar
Sugar & salt to taste

Method 2
Making sugar syrup
1/2 pot water
6 palm sugar
Sugar & salt to taste
2 pandan leaves

Making Coconut syrup
3 cups water
400 ml Coconut cream
Salt to taste





NASI MINYAK




Nasi Minyak or Ghee Rice, flavoured rice commonly serve with side dishes such as Ayam Masak Merah, Beef Rendang or curry dish and Acar Buah. Nasi Minyak, savoury rice to complement your meal.

Ingredients: 
1 kg Basmati rice
2 tbsp Ghee
5 tbsp vegetable oil {1/4 cup}
1 can Evaporated milk
2 Pandan leaves
1 Chicken cube
1 tbsp  ground almond 
Salt to taste
1/4 tsp Briyani colouring / saffron milk (optional)
