MANGO STICKY RICE




Thai sweet dessert, Mango Sticky Rice made from steamed glutinous rice with coconut milk and ripe mangoes. Here comes the Mango season, love the amazing taste of mango sticky rice. A sweet dessert we can easily make at home! 








Mango Sticky Rice

Recipe

Ingredients:

Mango
500g glutinous rice
(soak in water for 1 hour)
400 ml  Coconut cream
4 Pandan leaves
6 - 8 tbsp sugar
1 tbsp cornflour
Salt to taste


Step 1
Sweet Coconut syrup
2 cups water
200 ml Coconut cream
2 pandan leaves
6 - 8 tbsp sugar (adjust to taste)
Salt to taste


Method
Making Sweet Coconut syrup

1. In a saucepan pour 2 cups water, 2 pandan leaves, 8 tbsp sugar and salt to taste.
2. Stir until sugar dissolve and pour coconut cream
3. Simmer for 5 mins, remove pandan leaves and set aside

Step 2

Method 1
1. Soak glutinous rice for 1 hour and rinse
2. Steam glutinous rice for 15 mins and fluff.
3. Steam for another 15 mins.
4. Sprinkle a little water over the rice (if needed)
5. Cook time: 30 - 45 mins (depends on the type of steamer)

Method 2
Steam glutinous rice in 2 batches for 15 mins, fluff and steam for another 5 mins
Cook time : 20 mins

Step 4
Place steamed glutinous rice in a bowl
Pour 2 cups  Sweet Coconut sauce and mix well (adjust to taste)
Steamed rice will absorb the sweet coconut sauce


Step 3

Add 6 tbsp sugar and salt to taste
Stir until sugar is dissolve, pour coconut cream and let it simmer for 5 mins


Step 5

Creamy Coconut Sauce
2 cups water
2 pandan leaves
200 ml coconut cream
1 tbsp cornflour
Salt to taste


Cornflour mixture
1 tbsp corn flour
1/4 cup water


Method
Coconut Creamy sauce
1. Pour 2 cups water, 2 pandan leaves, 200 ml coconut cream and salt to taste
2. Mix 1 tbsp corn flour and 1/4 cup water
3. Remove pandan leaves and poor corn flour mixture


Sticky rice serve with mango and Creamy Coconut sauce

BUBUR CHA CHA



Sweet dessert Bubur Cha Cha, cooked with sweet potatoes and coloured flour dough. Simply delicious, homemade serve it hot or cold ... Enjoy!

Recipe

Ingredients:
Sweet Potatoes
Pandan leaves

Coloured Dough
4 tbsp flour
1 tbsp tapioca flour
1/4 tsp salt
1 - 2 cups water (adjust)

200 ml - 300 ml coconut cream

Palm sugar syrup
2 palm sugar
Sugar and salt to taste
2 pandan leaves

KUIH TALAM UBI




My take on making Kuih Talam Ubi or Steamed Layer Tapioca Cake a traditional malay dessert.  Sweet and savoury Kuih Talam Ubi using the same basic ingredients and taste checks as it goes. Simply amazing to create these in my kitchen, not as perfect as from the stalls but taste incredibly  delicious.













Talam Ubi  / Sweet Steamed Layer Tapioca Cake


Recipe

Ingredients:
Tapioca (grate)
1 tbsp tapioca starch
1/2 cup brown sugar (adjust)
2 tbsp sugar
salt to taste

Making Sugar syrup
2 - 3 cups water
2 - 4 pandan leaves
4 gula melaka
2 cups dark brown sugar
Sugar and salt to taste

Top Layer : Make about  600 ml - 800 ml liquid
400 ml - 500 ml water (adjust)
200 ml - 300 ml Coconut milk
2 tbsp rice flour
3/4  tbsp tapioca starch
3 - 4 tbsp plain flour
Salt to taste






KUIH LEPAT UBI AND IKAN GORENG BALADO







Reminiscing the old days, share a recipe Kuih Lepat Ubi or Sweet Steamed Tapioca. This sweet dessert brings back memories from my mum's kitchen. In the past, traditional cakes or kuih made from tapioca were grated manually, nowadays with food processor grinding gets easier. Love it always!
















Kuih Lepat Ubi / Sweet Steamed Tapioca


Recipe

Ingredients:
Tapioca
1 tbsp tapioca starch
Banana leaves
Grated Coconut

Ingredients - 'adjust to taste'
1/2 cup dark brown sugar
2 tbsp sugar
Salt to taste

Making Sugar syrup
2 - 3 cups water (adjust)
3 pandan leaves
4 gula melaka
2 cups dark brown sugar
Sugar and salt to taste


Ikan goreng Balado or Balado Fried Fish for quick and easy meal.

Recipe

Ingredients:
Fish 
2 red chillies
3 green chillies
4 - 6 chillie padi
1 onion or 5 shallots
2 garlic
Lime 
1/2 tsp shrimp paste granules (belacan)
Sugar to taste

Optional: Tomato

Marinate fish:
1 tsp tumeric
1/2 tsp chillie powder
1/2 tsp white pepper
1 tsp rice flour
1/4 tsp salt

Recipe

Ingredients:
3 cups flour
3 tbsp tapioca flour
4 1/2 - 5  cups palm sugar syrup (adjust)
1 tsp Lye water (air kapur)

Palm sugar syrup
6 palm sugar
1 cup dark brown sugar
3 tbsp sugar
Salt to taste
1/2 pot water
