MEE SIAM SINGAPURA

Ingredients: Rice Vermicelli noodles Beansprouts Chives Eggs Beancurd 1 - 2 tbsp dried shrimp 1/2 tbsp belacan 1 tsp turmeric powder 2 tbsp Taucho or fermented soy beans 1 - 2 tbsp tamarind paste (adjust to taste) Salt and sugar to taste 100 ml Coconut cream 2 tbsp toasted peanuts Prawn & anchovies stock: Prawn shells & heads 12 large anchovies 1 tbsp oil Sambal Paste - blend 30 dried chillies 3 onions or 20 shallots 8 garlic

Recipe

Ingredients:

Fresh Shiitake mushrooms
Portobello mushrooms
Dried shiitake mushrooms

Optional: Brown or white button mushrooms

2 yellow onions (chopped)
4 garlic (mince)
3 tbsp butter
2 cups chicken stock or 1 tbsp chicken granules 
Emborg Cooking cream
1 tsp black pepper
Salt

Ingredients:
Whole chicken 200 ml Coconut milk 2 bay leaves (Daun salam) 2 lime leaves 1 tbsp palm sugar 1 tbsp white peppercorns 1 tsp black peppercorns 1 onion or 8 shallots 4 garlic 4 cm ginger 4 cm kencur (optional) 2 red chillies 2 green chillies 4 - 6 chillie padi 4 candlenuts 1 lemongrass (chopped) Method 1 Spices mix: 3/4 tbsp coriander powder 1 tsp cumin powder 1/4 tsp nutmeg Method 2 Spices : - toasted & grind 3/4 tbsp coriander seeds 1 tsp cumin seeds
