CURRY NOODLE OR MEE KARI











Curry Noodle / Mee Kari Ingredients: Chicken / Chicken feet Curry leaves 1/2 onion 2 lemongrass Fried tofu puffs Fish balls Boiled eggs Quail eggs 200 ml coconut cream / 100 ml evaporated milk Yellow Noodle Chye sim Beansprout Celery leaves Spring onions Fresh red chillies Lime Fried shallots 1 cinnamon 1 star anise 3 cloves Ingredients: blend 1/2 cup ikan bilis / anchovies 2 onions 6 garlic 6 cm ginger 5 cm blue ginger or lengkuas Curry paste: 3 tbsp meat curry powder 1 tbsp coriander powder 1 tsp chillie powder 1/2 tsp tumeric powder 3/4 cup water Prawn stock Fry prawn heads & shells for 5 mins with crushed garlic & ginger Add 3 cups water, 2 tbsp fish sauce and salt to taste Sambal Tumis Ingredients: 1/4 cup ikan bilis 40 dried chillies 2 onions or 12 shallots 5 garlic 4cm ginger 1 tsp belacan 1/2 tsp tumeric 1/4 cup vegetable oil 1 tsp tamarind paste Sugar to taste Salt to taste Seasoning
