BEEF RICE OR NASI DAGING




Flavourful Beef Rice or Nasi daging a Malay rice dish, fragrant and less greasy. A delicious rice dish served with Ayam Masak Merah, Acar Buah and Beef Dalca.    Beef rice, a rare dish in Singapore and I've tasted some years back. Beef Rice / Nasi Daging

Recipe
Ingredients: 1 kg Basmati rice Beef 1 can evaporated milk Sop Bunjut Spice mix: 2 tbsp Kurma Powder 1 tbsp soup powder Spices 2 cinnamon sticks 2 star anise 3 cardamom 3 cloves 2 bay leaves Other ingredients: 4 tbsp oil 1 tbsp ghee 1 onion (slice) 1 lemongrass 2 pandan leaves 1 tsp tumeric powder Blended ingredients: 1 onion or 6 shallots 2 garlic 3 cm ginger Fried onions 2 onions or 30 shallots(slice & fried) Raisins

Ayam Masak Merah (Mint Leaves) Ingredients: Chicken 2 lemongrass Mint Leaves Coriander Leaves 2 onions 4 cm blue ginger (lengkuas) 4 tbsp chillie sauce Marinate: Chicken 1 tbsp tumeric 1 tsp chillie powder 1 tsp salt Spices: 2 cinnamon stick 2 star anise 4 cardamom 4 cloves Mix spices: 3/4 tbsp coriander powder 1 tsp fennel powder 1 tsp cumin powder Blended ingredients: 2 onions or 25 shallots 4 garlic 3 cm ginger 30 - 50 dried chillies (deseed, boil & blend) 1 tsp tumeric 1 tsp shrimp paste (belacan) 2 tbsp sugar 1 tbsp red sugar Salt to taste

ACAR BUAH OR SPICY DRIED FRUITS PICKLE

Acar Buah
Recipe
Ingredients: Mixed dried fruits Prunes, plums, nutmeg, raisins, etc Shallots Garlic Blended ingredients: 10 shallots 6 garlic 5 cm ginger Dry roast / toasted 1 tsp fennel seeds* 1 tsp cumin seeds* Spices 3 cinnamon 4 star anise 4 cardarmom 6 cloves

Other ingredients: 4 tbsp chillie paste 2 tbsp chillie powder 1 tbsp curry powder 1 tsp tumeric 1 tbsp garam masala 4 tbsp sugar Salt to taste 2 tbsp vinegar 4 tbsp dark sugar syrup

Beef Dalca Ingredients: Beef shank & Ribs / Mutton 2 cups dhal (Yellow Lentils) 5 cm ginger Potatoes Brinjals Long Beans Tomatoes Green Chillies Coriander Leaves Spring onion Other ingredients: 5 tbsp oil 1 tbsp ghee 4 dried chillies 2 lemongrass Curry leaves 2 pandan leaves Mix spices: 1 cinnamon stick 2 star anise 4 cardamom 4 cloves 1 tbsp mix fenugreek or halba campur Blended ingredients: 2 onions or 25 shallots 4 garlic 5cm ginger Curry mix: 3 tbsp curry powder 1 tbsp garam masala 1 tsp tumeric 1 tbsp chillie powder 1 tsp coriander powder 1 tsp fennel powder 1 tsp cumin powder Mix spices: (optional) Dry fry Coriander seeds Fennel seeds Cumin seeds Blackpeppercorns Mustard Seeds Step 1 Boil beef & ribs for 10 mins, discard water, rinse. Boil beef & ribs, add a tsp salt water and cook for 1 hour Salt & sugar to taste 3 tbsp tamarind paste or 4 tamarind slice 200 ml coconut cream Sauteed ingredients: Tumis Darat 2 tbsp oil 1 tsp ghee 1 onion or shallots (slice) 2 garlic 1 tsp cumin seeds Curry leaves

Mee Goreng Pedas

Recipe

Ingredients:
Yellow Noodle
Beansprouts
Chives
Lime

Making Sambal Paste
20 dried chillies (deseed, boil & blend)
1 onion or 10 shallots
3 garlic
1/2 tsp Shrimp paste (granules) / belacan
1/2 tsp tumeric
Sugar & salt to taste
1/2 tsp chicken granules (optional)

1 tbsp dried shrimp paste (pound / blend)
1 tbsp oyster sauce
1 tsp sugar
2 tbsp chillie sauce

Optional:
2 eggs
1/2 tsp white pepper
1/4 tsp black pepper
