KUIH MAKMUR KURMA



Kuih Makmur Kurma

A long forgotten snack locally known as 'Kuih Raya' often enjoyed during Eid celebration. I have created an easy step by step method to bake these sweet and savoury traditional cookies filled with dates. Although some recipes use butter or ghee, I prefer making it with Planta margarine as it adds a unique taste.

Recipe Ingredients: 800g flour 500g Planta margarine / Anchor butter 2 egg yolks 1 cup custard powder 1 cup corn flour 1 tsp vanilla essence A pinch of salt 1 tsp icing sugar Dates / Kurma Icing sugar Plastic crimper

Chapati

Indian flat bread, soft & crispy serve it with mutton keema or any curry dish and it tastes amazingly delicious with Sambal Sardine.

Ingredients:

1 kg Chapati flour
2 tbsp ghee (melted)
2 tbsp oil
3/4 tbsp salt (adjust to taste)
3 cups warm water


MUTTTON KEEMA












Mutton Keema

Ingredients: Beef / Mutton 1 tsp mustard seeds 1/4 cup oil I onion (chopped) 1 tomato 3 green chillies 2 tbsp chillie paste 1 tbsp curry powder 1 tsp tumeric 1 tsp chillie powder *1 tbsp garam masala *1 tsp black pepper *1/4 tsp nutmeg {*or use 1 tbsp briyani powder (Adabi) 1 tbsp kerutuk powder (Adabi)} 2 tbsp yogurt / 1 cup cooking cream 2 tbsp lime juice Optional: 3 tbsp chillies sauce 1 tbsp tomato sauce 1 tsp Kasuri Meethi (dried fenugreek leaves) Coriander leaves Mint leaves Bird's eye chillies

TAHU SUMBAT OR STUFFED TOFU

Fried tofu stuffed with vegetables serve it with sweet chillie sauce or sweet peanut sauce. Memories from the good old days, here I've created a popular snack that many of us use to enjoy.

Recipe Ingredients:
Beancurd
Carrot (julienne) Cucumber (julienne) Beansprout (blanch) Peanut Sauce

PRAWN CURRY








Prawn curry / Kari Udang

Prawn curry Ingredients: Prawns 2 lemongrass 5 cm galangal Curry leaves Ingredient: (slice) 1 onion or 5 shallots 3 garlic 3 cm ginger Blended ingredients: 1 onion or 10 shallots 3 garlic 4 cm ginger Ingredients: 1 tbsp mustard seeds 1 tsp tumeric 1 tbsp chillie powder 2 tbsp chillie paste 4 tbsp Babas Salted Fish Curry Mix 2 tbsp briyani powder (Adabi) 1 tbsp kerutuk powder (Adabi) 1/2 palm sugar (1 tbsp dark brown sugar or 1/2 tbsp sugar) 1 tbsp ground almond 100 ml coconut cream 1/2 tbsp tamarind paste 1 ikan bilis cube (Anchovies) Salt to taste Coriander leaves Celery leaves Spring onion

CRAB CURRY






KARI KETAM


Mum's flavourful spicy crab curry, a delicious meal for the whole family a dish worth a try!







KARI KETAM / CURRY CRAB



Ingredients: A

Crabs
1 tbsp mustard seeds
1 tsp spice mix (optional)
2 lemongrass
5cm galangal (bruise / slice)
Curry leaves
Green chillies  (optional)


Sliced ingredient:

1 onion or 5 shallots
3 garlic
3 cm ginger 



Blended ingredients:

1 onion or 10 shallots
3 garlic
4 cm ginger


Ingredient : B

1 tsp tumeric
1 tbsp chillie powder
2 tbsp chilli paste
5 tbsp Babas Salted Fish Curry Mix
1 tbsp garam masala


Ingredient : C

1/2 palm sugar or 1 tbsp dark brown sugar
2 tbsp tamarind paste
200 ml coconut cream
1 ikan bilis cube (Anchovies)
Salt to taste
4 tbsp chillie sauce (optional)
Coriander leaves
Celery leaves
Spring onion (optional)

Kari ketam 
Bahan-bahan: A Ketam 1 sudu besar biji sawi 1 sudu kecil campuran ketumbar, jintan manis & jintan putih (disangai) 2 batang serai 5cm galangal Daun kari Cili hijau Bahan-bahan yang dihiris: 1 biji bawang besar atau 5 biji bawang kecil 3 biji bawang putih 3 cm halia Bahan-bahan di kisar 1 biji bawang besar atau 10 biji bawang kecil 3 biji bawang putih 4 cm halia Bahan: B 1 sudu kunyit 1 sudu besar serbuk cili 2 sudu besar pes cili 5 sudu besar Kari ikan Babas (Ikan Masin) 1 sudu besar garam masala Bahan: C 1/2 gula melaka atau 1 sudu besar gula perang 2 sudu besar asam pes 200 ml santan kelapa 1 kiub ikan bilis Garam secukup rasa 4 sudu makan sos cili Daun ketumbar Daun saderi Daun bawang


KUIH BAKAR PANDAN


Kuih Bakar Pandan

A traditional malay kuih, fragrant and sweet, I have re-created the recipe in simple steps.










Kuih Bakar Pandan

Recipe

Ingredients: Blend
  • 10 pandan leaves
  • 6 cups water (adjust)
  • 2 & 3/4 cup flour (adjust)
  • 300 ml coconut cream
  • 1 egg
  • 1 cup sugar
  • Salt to taste
  • Green colouring
  • Vegetable oil
  • Sesame seeds
  • 2 Kuih Bakar baking pans 

Method

  • Combine 3 cups pandan juice, egg, sugar, coconut cream and blend
  • Add 1 cup flour at a time to the mixture and blend again
  • Add salt to taste and 3/4 tsp green colouring

Baking pan

Grease the baking pan with 2 tbsp of vegetable oil

Kuih Bakar Mould

Heat the mould on the stove for 2 mins, add 2 tbs vegetable oil, sesame seeds and pour the pandan mixture

Let it cook for 5 mins and transfer to the oven

Bake @ 190ºC bottom heat for 30 mins
Continue to bake oven mode (top & bottom heat ) for 20 mins

Recipe

Ingredients:
  • Beef / Beef Bones / Mutton / Chicken
  • 1 sup bunjut
  • 5 cm ginger
  • Beef stock / Water
  • 1 tbsp Spice Soup powder *Mak Siti Serbuk Rempah Sup
  • 1 beef cube
  • 2 tbsp oyster sauce
  • 1 tsp white pepper
  • 1 tsp black pepper
  • 1/2 sugar

Mix spices:
  • 1 cinnamon stick
  • 2 star anise
  • 2 cardamom
  • 2 cloves

Slice ingredients: (optional)
  • 1 onion / 5 shallots
  • 2 garlic

Pound ingredients:
  • 1 onion / 5 shallots
  • 2 garlic


Other Ingredients:
  • Beef / Mutton meatballs
  • (Armiya Beef/Mutton meatballs or Marina Meatballs)

  • Carrot
  • Spring onion
  • Chye Sim / Sawi
  • Cabbage
  • Celery
  • Fried shallots
  • Chillie Pickles
  • Lime

Sauces:
  • Sambal Kicap
  • Hot Chillie Sauce (ABC brand)

Sambal Kicap:
  • 10 Red & green chillies
  • 8 chillie bird's eye chillies
  • 6 garlic
  • 2 tbsp sugar
  • 2 cups sweet soya sauce
  • 6 lime or 3 tbsp vinegar
