MEE SIAM SINGAPURA



Mee Siam Singapura, a local favourite homemade sweet and sour spicy noodle dish. There are different methods of cooking, I've shared on my previous posts. This is something worth watching, don't miss out and try it in your kitchen

Mee Siam Singapura

Recipe

Ingredients:
Rice Vermicelli noodles
Beansprouts
Chives
Eggs
Beancurd

Prawn & Anchovies stock

Ingredients:
Prawn shells & heads
12 large Anchovies
1 tbsp oil

Stir fry prawn shells and heads with 1 tbsp oil.
Add 5 cups water and boil the stock for 5 mins
Sieve the prawn stock


Sambal Paste

Blended Ingredients
20 - 30 dried chillies (deseed & boil)
3 onions or 25 shallots
8 garlic

1 -2 tbsp dried shrimp
1/2 tbsp shrimp paste (belacan) or 1 tsp shrimp paste powder
1 tsp turmeric powder or 4 cm fresh turmeric
2 tbsp Tauco or fermented soy beans


1 - 2 tbsp tamarind (adjust to taste)
 Salt and sugar to taste

100 ml Coconut milk
2 tbsp peanuts (roast & pound / grind)
