ROTI BOYAN



Roti Boyan or Boyanese bread is originated from the Boyanese community. The traditional snack has  passed down for generations, it has been one of the favourite foods among the malay community and other races. Looking back and craving for it, I decided to recreate the fried bread at home.













Roti Boyan / Potato Roti


Recipe

Ingredients:

Filling
  • Potatoes (boiled & mashed)
  • Onion (chopped)
  • Spring onion (chopped)
  • 1/2 tsp white pepper
  • Salt to taste
  • 4 eggs (beaten)


 Pastry Dough
  • 1 kg flour
  • 3 tbsp  Planta margarine 
  • 3 cups cold water
  • 1/2 tbsp salt
  • 1/4 cup vegetable oil


Sambal Tumis Ikan Bilis (Anchovies)

Ingredients:

  • 50 dried red chillies
  • (deseed, boil & blend)


Blended Ingredients: (Use about 4 tbsp onion mix)
  • 2 onions / 20 shallots
  • 6 garlic
  • 3 cm ginger


Other ingredients:
  • 1/2 tsp shrimp paste granules (belacan)
  • 1 tsp tumeric
  • 1 ikan bilis cube or 1 tsp chicken granules (optional)
  • 2 tbsp palm sugar / 2 tbsp red sugar 
  • Sugar to taste
  • Salt to taste
  • 1/2 tsp tamarind paste
