SAMBAL SOTONG KERING




Spicy Sambal Sotong Kering or Dried cuttlefish Sambal in my to do list. Creating this sambal dish in a simple steps and enjoy it with rice or lontong dish.







 



Sambal Tumis Sotong Kering 
(Dried Cuttlefish Sambal)


Recipe

Ingredients:
Dried squids / Dried cuttlefish
Abu chang / Soda ash

40 - 60 dried chillies (cut into strips, deseed, boil & blend)

Blended Ingredients:
3 onions /20 shallots
6 garlic
4 cm ginger
3 cm blue ginger ‘lengkuas’ (crushed)

1  tbsp Ikan bills or anchovies (pounded}
1 tsp shrimp paste powder (belacan}
1 tsp tumeric

1/4 cup palm sugar syrup (adjust)
1 tbsp red sugar
Sugar (adjust to taste)
Salt to taste
3/4 tsp tamarind paste
Add water (if require)

Optional:
Making palm sugar syrup                                                                                                                         (Boil for 8 - 10 mins, set aside to cool)
4 pandan leaves
6 palm sugar
1 cup dark brown sugar
1 tbsp sugar
Salt to taste
1/4 pot Water (adjust)

{Keep palm sugar syrup in the fridge}

Fried chicken Recipe
Chicken / chicken wings
1 tbsp tumeric
1 tsp salt
2 tbsp rice flour
*1 tbsp coriander seeds  
*1/2 tsp fennel seeds
*1/2 tsp cumin seeds (*pounded)
Optional : 1/2 tsp chillie powder
