BUTTER CHICKEN (MURGH MAKHANI)





Murgh Makhani or Butter Chicken unique and special on its own. A popular and delicious Indian curry commonly served with Naan, roti, bread and rice. Our homemade Butter chicken taste almost as good as from the restaurant. Finding spices brought us all the way to Little India. Mustafa Centre is one of the oldest mall in Singapore, we'll see a wide range of products to choose.

Butter Chicken or Murgh Makhani Ingredients: Chicken Butter Yogurt Emborg Cooking cream Butter Chicken Spices (MDH brand) or Tandoori spices Dried fenugreek leaves (Kasoori Methi) Kashmiri Chilli powder Garam Masala Tumeric Lemon juice ( 4 - 6 tbsp) 4 tbsp ginger & garlic paste 4 onions 2 tomatoes 3 green chillies Cashew nuts / almonds (soak in hot water for 30 mins) 1/2 can tomato puree (Gilda brand - 2 tbsp) 2- 3 tbsp Golden syrup /honey / corn syrup - adjust to taste Step 1 Chicken Marinate : (1-2 hours ) 2 tbsp lemon juice 1 tbsp garlic paste 3/4 tbsp ginger paste 1 tbsp kashmiri Chillie powder 1 tbsp Butter Chicken Spices (MDH brand) 1/4 tsp salt 1 tbsp dried fenugreek leaves (Kasoori methi) 2 tbsp yogurt Step 2 Making Tomato sauce: 2 tomatoes 3 green chillies 4 onions (chopped) 20 cashew nuts or almond (soak in hot water for 30 mins) 3 cardamom , saute onions for 3 - 4 mins, add tomatoes, green chillies. Add 1 tbsp Butter chicken Spices (MDH brand) Cook for 3 mins, add 2 tbsp tomato puree, 1 cup water, cashew nuts or almond. Add 1/4 tsp sugar and 1/4 tsp salt Cool the tomato sauce for 15 mins Blend tomato sauce to a fine paste Step 3 In a pan pour 3 tbps oil and 3 tbsp butter (75g) Fry chicken pieces, add 2 tbsp golden syrup (honey or corn syrup), cook for 5 mins. Bake chicken at 180º C or 190º C for 7 mins or browned Step 4 In the same pan, pour blended tomato sauce, add 1 tbsp garlic paste, 3/4 tbsp ginger paste and cook for about 5 mins Add 1 tsp kashmiri chillie powder (adjust), 1 tsp tumeric powder and 1 tbsp garam masala Add 1 cup cooking cream and salt to taste Add the roasted chicken pieces, 1 tsp garam masala and add about 1 tbsp dried fenugreek leaves (Kasoori meethi) Add 1 tbsp butter and 2 tbsp lemon juice (adjust to taste) Add 1 tsp fenugreek meethi, cream and coriander leaves

4 - 6 chillie padi (optional)

Baked Butter Chicken Curry Leaves

Recipe

Ingredients:
Chicken
(squeeze lime and salt over chicken for 5 mins, rinse & drain)
2 onion (slice)
4 Potatoes (cut into wedges)
2 sprigs curry leaves
1/4 -1/2 cup evaporated milk
3 tbsp corn syrup


Blended Ingredients:
1 onion (or 12 shallots)
4 garlic
3 cm ginger

Spice mix : (marinate for 10 mins)

3/4 tbsp tumeric
1 tsp Salt
1 tbsp curry powder
1 tbsp chillie powder
3/4 tbsp coriander powder
1 tsp fennel powder
1 tsp cumin powder
optional: 1 tbsp chicken granules

Nasi Bukhari

Recipe

1/2 kg basmati rice (India Gate)
Chicken  / 4 whole leg chicken
1/4 cup olive oil
2 tbsp ghee
1 onion (diced)
1 tbsp ginger & garlic paste
2 pandan leaves

3/4 can evaporated milk
1/2 can tomato puree
Chicken stock  or Chicken granules
Coriander leaves
Salt to taste (if require)

optional: raisins


Spices
1 cinnamon
2 star anise
3 cardamoms
4 cloves

Chicken Marinate:
1 tbsp Briyani spices (National brand)
1 tbsp chillie powder
1 tsp tumeric powder
1 tbsp coriander powder
1 tsp fennel powder
1 tsp cumin powder
1 tbsp kurma powder
2 tbsp ginger garlic paste
1/2 tsp salt


Acar Salad
Jicama (Sengkuang)
Cucumber
Carrot
Pineapple
Red Chillies
2 tbsp sugar
1/4 tsp salt

Marble Cake 1 Ingredients 5 eggs 250g Anchor Butter / Planta Margarine 230g icing sugar (recommended) or 170g castor sugar 2 tsp vanilla essence 150 ml condensed milk 1 tbsp sponge cake emulsifier (ovalette) 1/8 tsp salt Dry ingredients: Sift 240g self raising flour 1 tsp double acting baking powder 2 tbsp skimmed milk / ice cream strawberry milk powder Pre-heat oven @ 160ºC Bake @ 170º - 180 º C oven mode (top & bottom heat) for 50 mins Note : You can use 30 ml evaporated milk as substitute for skimmed milk Marble Cake 2 Ingredients: 5 eggs yolks 5 egg white 250g Anchor Butter (melted) 230g icing sugar 2 tsp vanilla essence 150 ml condensed milk 1 tbsp sponge cake emulsifier (ovalette) 1/8 tsp salt Dry ingredients: Sift 240g self raising flour 1 tsp double acting baking powder 2 tbsp skimmed milk / ice cream strawberry milk powder Red / Green colouring 1 tbsp Nutella or 2 tbsp Van Houten Cocoa Powder + 2 tbsp warm water Note: You can double the cake recipe, use 10" x 7" x 3" and 8" x 8" baking pans and bake for 50 - 70 mins depends on the size of the pans

40 dried red chillies
2 onions or 20 shallots
6  garlic

2 tbsp chilli sauce
2 tbsp tomato sauce

2 tbsp oyster sauce

KUIH LOPES / GLUTINOUS RICE WITH PALM SUGAR SYRUP

















I’ve made these by using two different methods steaming and boiling. I prefer steaming as it taste much better and it takes shorter cooking time.







Kuih Lopes / Glutinous Rice With Palm Sugar Syrup
Ingredients: 5 cups glutinous rice Abu chang (Soda Ash) Banana Leaves Raffia string Grated coconut Pandan leaves 1/4 tsp salt Gula Melaka sugar syrup Ingredients: 3 - 4 gula melaka 1 tbsp dark brown sugar 2 pandan leaves 1/4 tsp salt 1/4 - 1/2 cup water (for thicker sugar syrup add less water)
















ANCHOVY FRITTERS




Anchovy fritters are tasty snacks, served with homemade chillie sauce. Loving every crunch of these tiny anchovies and green chillies in these fritters. Too easy making these, absolutely great for breakfast or anytime snacks.





Homemade snack you will simply love ... 'no matter'  and  wherever you are. I’ve made something like these when I went mountain climbing in Malaysia long time ago. I must say this is one of my favourite snacks and it's hard to say 'no' ...I believe you too may like it!

ROTI PRATA AND CHICKEN CURRY




Handmade freshly fried flat bread, also known as Roti Prata in Singapore or in Malaysia 'Roti Canai'. Tasty home made Roti Prata taste almost like the original... 'I guess'. No secret recipe, my trial and tested recipe, I must say the taste is right! Success in the making, don't come naturally, do need lots of practice and some skills. At times,  good to watch the Prata man at work showing their skills and amazing energy. Soft, crusty Roti Prata with egg freshly fried are much more tastier than plain Roti Prata.






For many of us here, always busy at work, no worries Roti Prata outlets are almost everywhere. In my opinion, homemade too.... taste at it's best especially with home-cooked curry chicken or fish curry.






In this recipe, which is simple & easy chicken curry, mixed everything to cook with the chicken and do add potatoes. Different style of cooking and the choice of using coconut milk or evaporated milk for this dish. Created a Prata video before, here another style of making and a  few shared ideas with everyone. Follow my taste buds, sambal dish are amazing with these Roti s'.
